Our Day of Exploration at Space Center Houston
We’ve been on the road with the kids since last month, vacationing in areas not too far from Austin. I’ll be selecting some of the highlights to share with you this summer, in hopes that you’ll make a day trip yourself!

Texas Hill Country Olive Company Is Inviting Day Trip Destination
The end of 2008 found John Gambini sitting in a doctor’s office, reading an article in Texas Co-op Power Magazine about the fledgling olive oil industry in Texas. John loved the romance of the Texas Hill Country and had already decided that he wanted to plant firm roots in the area (pun intended).
But more than putting a stake in the ground, John wanted to do some pioneering, accomplishing something that would stand out from other Hill Country offerings. After reading the article, he realized that he could be one of the early pioneers in the olive oil industry in Texas.
So John set out with a dream: to create a destination-class olive oil business here in Texas.

Situated two hours southwest of Austin, Kerrville, TX was placed toward the bottom of our day trip list because of its distance away. But after visiting Wimberley, Gruene, multiple state parks and so many Hill Country gems closer to us, we still kept hearing good things about Kerrville.

Day Trip to a Distant Past: Inner Space Caverns
Driving around Austin, there is so much to see to engage your imagination. Flashy neon signs, funky graffiti, natural parks.
But you may have missed one of the most natural beauties in the Austin area, just feet away. Seventy feet, to be exact, down below you as you pass along I-35 right outside of Georgetown.
The Inner Space Caverns were discovered in the 1960’s. Construction crews bore down while expanding the highway, only to realize that not only was their drill much deeper than they’d expected, but it was stuck! For the longest time, Alamo Springs Cafe didn’t have a website. AlamoSpringsCafe.com redirected to a Facebook page. They are out in the middle of nowhere. And none of this bothers them in the least.
When your burgers are this good, you don’t need to worry about silly little details like location and a functional website. I mean, who needs all that to be successful, right?
