I’ve always been a sandwich lover. If I had to decide on one meal to eat for the rest of my life, then it would definitely be a sandwich. Probably a Reuben. When I first heard about Noble Sandwich Company, which opened in 2010, I immediately went to its website to peruse the menu. I was intrigued by the unique creations and wanted to try them all. Needless to say, I’ve become a frequent customer.
Not only is the Noble menu creative and delicious, but the vibe is pure Austin. The first time I walked into the restaurant, blues music was playing. There’s no better combination than good food and good music, in my opinion. Aren’t both integral to what makes Austin a fabulous city to live in?
I’ve now worked my way through the breakfast and sandwich menu, and tried a few variations of the mac and gouda dish. With scratch-made ingredients and original flavor combinations, Noble Sandwich Company does not disappoint. I’m hooked.
Carefully Crafted Sandwiches
The sandwich menu is available for lunch or dinner, and features some unique combinations. The first time I tried Noble Sandwich Company, I ordered The Knuckle and Smoked Duck Pastrami, but that’s only the beginning.
- The Knuckle is a spin on a classic French dip, served with a side of beef au ju (the meat’s natural juices) to dip your sandwich in.
- The Smoked Duck Pastrami, which you can make into a Reuben, incorporates duck pastrami instead of corned beef.
- If you prefer beef, the Stacked Beef Reuben will leave you drooling for more with beef pastrami, sauerkraut, Swiss cheese, and Russian dressing on whole grain. Pro tip: this sandwich is large, so bring a friend to share.
- If you’re feeling adventurous, the menu includes Seared Beef Tongue served with green onions, red pepper relish, and aioli.
- The PBLT uses pork belly, instead of regular bacon, that is smoked in-house.
- Vegetarian options includes an oyster mushroom Reuben.
- If you’re more of a traditionalist, The Noble Pig uses ham, pulled pork, and bacon to pay tribute to its namesake.
There’s something for everyone on the menu. Burgers have even been added to the menu, if that’s more your style.
Regardless of what you order, you’ll be able to taste the care that goes into Noble’s menu, from the in-house roasted meats, to the carefully-crafted combination of ingredients. This local business also offers a variety of options such as gluten-free bread, lettuce wraps, or turning sandwich fixings into a salad.
Don’t Miss Weekend Brunch
Breakfast options are available every Saturday and Sunday from 8 a.m. until 12 p.m. Many items are made in-house, including the chorizo, sausage, bacon, biscuits, and bread. The breakfast menu includes traditional biscuits and gravy, a variety of egg sandwiches, and even warm, comforting oatmeal.
My personal favorite menu item is the blueberry waffle. The scratch-made waffle is topped with a blueberry compote and served with sausage, scrambled egg, home fries, and honey butter. The dish is the perfect combination of savory and sweet.
On a recent visit, I saw grits were added to the menu. I can’t wait to head back and try them, with added pulled pork and a fried egg. Fried eggs with runny yolks make everything more delicious.
Sides and More at Noble Sandwich Company
Even if sides aren’t typically your thing, don’t pass up Noble’s. The slaw is savory, yet refreshing, and jalapeños add a mild heat. The truffle fries are decadent. The soups make a perfect pairing to your sandwich. The Mac and Gouda is in a category all its own. Try the dish with added Brussels sprouts, pork belly and egg, pulled pork, or bacon. I like to top mine with pork belly and fried egg.
Local and craft beers are available, as well as Maine Root soda products, coffee, and tea.
Catering and Special Events

This business continues to thrive in the Austin community, and it’s easy to understand why. You can taste the difference. From the quality of ingredients and scratch-made items to the creativity behind the menu, I keep going back for more.
