Prepare to be smitten with Erin Fellows. Her crystal blue eyes and button nose are framed by blond locks of shoulder length hair, resembling the adorable animated Cindy Lou from Whoville, the knee-high girl with charms even the Grinch couldn’t resist!
But Erin has something Cindy Lou lacks. She can bake! To smell divine, some women spritz themselves with liquid botanicals. Erin’s presence is followed by the fragrant mixture of buttercream and chocolate. Born and raised in the Lone Star State, years ago she pursued a great opportunity to work in Colorado under Chef Robert Citto at Vista Verde Guest Ranch, where she acquired the baking skills that would eventually bring her back to Austin and inspire her to enroll at Le Cordon Bleu.
Since graduating, she’s found a rewarding career with Amy’s Ice Creams. When Amy’s ventured into the world of baking, Erin was chosen as Head Baker and Managing Partner to lead a team of entrepreneurs in the development of Baked by Amy’s.
Baked by Amy’s Heavenly Bites
An addiction began with Baked by Amy’s Reese’s Cupcake. My mouth waters remembering the dense chocolate cake and whipped peanut butter frosting, topped with bits of crumbled Reese’s. Biting into this luscious confection, your mouth is further rewarded by a hidden layer of thick chocolate that lurks beneath the surface of the buttercream. Heaven.
Pride aside, I have a confession. I lick the paper clean, twice…every time! In addition to cupcakes, their menu offers a plentitude of treats to reward your sweet teeth: cakes, brownies, cookies, fudge, truffles, macarons and Baked Pops.
Frosting and Frills
Nothing dull or stuffy here. A sprinkle of flowers are standard staples on their tables, along with brightly colored pillows dotting chairs. And the two black chalk board walls with pastel scribbles and drawings make the intimate space fun and whimsical!
Looking beyond the pastry case, you’ll notice a team of bakers hovering over robin egg blue and hot pink KitchenAid mixers, whisking and whipping up an assortment of batters and frostings which reward your nose with sweet scents drifting overhead.
A Memory in the Making
Discovering the made from scratch goodness within this little bakeshop brought a flood of memories back to me. I was reminded of my grammar school days, a time when I could go home after school and eat a whole box of Little Debbie Nutter Butters, guilt free (until mom noticed!).
I’ve grown, and so have my taste buds. I no longer see the appeal of devouring a box of snack cakes, but I do see value in finding a treat that can make me recall a time when it didn’t seem like such a bad idea.
Not unlike the Grinch, my heart has grown since discovering my little neighborhood bakery. On days when I indulge my taste buds with one of Erin’s confections, life is sweet – no dreaming required.
