The Face Behind the Chips
Owner Elisia Velasquez has a natural affinity for baking. In 2016, she tried veering away from her love for baking to focus on a food blog. The goal was to document her learning-to-cook journey. “Because believe me, while cookies and cupcakes are so delicious, you cannot live off of that,” she told me. Eventually, she found herself drawn back into the world of baking.
Velasquez first intended to sell several baked items at farmers’ markets, like carrot cake and chocolate espresso cupcakes. Instead, she decided to start her adventure with amazing chocolate chip cookies, which are massive with a soft center. Honestly, it’s the perfect recipe for a sweet treat paradise!

On the weekends, you can find Teddy V. Pâtisserie cookies at Texas Farmers’ Market locations: Lakeline on Saturdays and Mueller on Sundays.
Being part of the farmers’ market has allowed Velasquez the opportunity to meet other small business owners and make connections to grow her business. It’s also been a great place for her to get to know her customers (and their cute canine friends–don’t be surprised if she remembers you by your dog’s name).
As a one-woman company, Velasquez has been able to grow her cookie business and play around with ideas. She makes sure to give herself permission to trust her intuition and try new things. For instance, she’s hosting a cookies-and-champagne customer appreciation party in May 2018. And while she doesn’t plan on opening a storefront at the moment, she can still accommodate large corporate orders.

Pawprints on My Heart
So why call a cookie business Teddy V. Pâtisserie? The name (also the name of Velasquez’ food blog) actually comes from the most adorable source of inspiration: a precious dog named Theodore! When the entrepreneur first got him, she planned to call him Teddy as a nickname. But he was a little too bossy for such a cute moniker.
As Velasquez says, “I am such a crazy dog mom, and of course his name resonates with me, and is my heart and soul.”
Teddy V. will be having a fun celebration for Theodore’s Birthday (a twist on Eeyore’s Birthday) on July 21 and 22, 2018. Proceeds will be donated to an animal rescue group. Isn’t that paw-fully sweet?
